I made this recipe tonight for dinner. It was really good and I will definitely make it again. It calls for 3/4 cup of soya sauce, but I would decrease this next time to 1/2 cup. Also it called for canned pineapple and I didn't have any so I added some orange juice instead. I also used a package of 20 chicken thighs, and froze half of it.
Prep time: 20 minutes
Cook time: 4 hours on high
Ingredients:
1 tablespoon vegetable oil
10 boneless, skinless chicken thighs
3/4 cup honey
3/4 cup lite soy sauce
3 tablespoons ketchup
2 cloves garlic, crushed
1 tablespoon minced fresh ginger root
1 (20 ounce) can pineapple tidbits, drained with juice
Directions:
1. Heat oil in a skillet over medium heat, and cook chicken thighs just until evenly browned on all sides. Place thighs in a slow cooker.
2. In a bowl, mix honey, soy sauce, ketchup, garlic, ginger, and reserved pineapple juice. Pour into the slow cooker.
3. Cover, and cook 4 hours on High. Stir in pineapple tidbits just before serving.
4. Mix the cornstarch and water in a small bowl. Remove thighs from slow cooker. Blend the cornstarch mixture into remaining sauce in the slow cooker to thicken. Serve sauce over the chicken.

Maple Apple Pork
I heard this recipe a few years ago on the radio, I believe it was an ad for Farmboy.
1 pork tenderloin
4 apples peeled and sliced
1/4 cup real maple syrup
Combine all ingredients in the slowcooker, and cook for 4-6 hours. Slice and serve with green veggies and rice.

Slow Cooker Latin Chicken
INGREDIENTS
1 tablespoon olive oil
3 pounds skinless chicken thighs (you can substitute breasts)
salt and ground black pepper to taste
2 large sweet potatoes, cut into chunks
1 red bell pepper, cut into strips
2 (15.5 ounce) cans black beans, rinsed and drained
1/2 cup chicken broth
1/2 cup loosely packed cilantro leaves
1 cup hot salsa
2 teaspoons ground cumin
1/2 teaspoon ground allspice
3 large cloves garlic, chopped
lime wedges, for garnish
DIRECTIONS
Heat the olive oil in a large skillet; season the chicken thighs with salt and pepper. Sprinkle 1/4 cup cilantro over the chicken thighs; brown the chicken in the frying pan, 3 to 5 minutes each side.
Arrange the chicken in the bottom of a slow cooker. Place the sweet potatoes, red bell pepper, and black beans on top of the chicken. Mix together the chicken broth, 1/4 cup cilantro leaves, salsa, cumin, allspice, and garlic together in a bowl; pour into the slow cooker. Set slow cooker to LOW and cook for 4 hours. Slow Cooker Sweet & Tangy Chicken
INGREDIENTS
2 (18 ounce) bottles barbecue sauce (I wonder if you can use less)
1 (15 ounce) can pineapple chunks
1 green bell pepper, chopped
1 onion, chopped
2 cloves garlic, minced
8 boneless, skinless chicken breast halves
DIRECTIONS
In a large bowl, mix together barbecue sauce, pineapple with juice, green bell pepper, onion, and garlic. Arrange 4 of the chicken breasts in the bottom of a slow cooker. Pour half of the barbecue sauce over the chicken. Place remaining chicken in slow cooker, and pour remaining sauce over the top. Cover, and cook on Low for 8 to 9 hours.

Cabbage Roll Casserole
6 cups shredded cabbage and carrots
3/4 pound cooked extra lean ground beef
1/2 teaspoon salt
1/4 teaspoon pepper
1 medium onion, chopped
1 cup raw long grain rice
26 ounce can low fat chunky spaghetti sauce
1/2 cup water
1/4 teaspoon dried basil
1/4 teaspoon seasoned salt
Place half the cabbage and carrots in crock pot. Crumble ground beef over top. Sprinkle 1/4 teaspoon of the salt and 1/8 teaspoon of pepper over beef. Evenly spread onion, the rice over top. Top with remaining cabbage, salt and pepper. Combine spaghetti sauce, water, basil and seasoned salt. Pour over cabbage. Cover and cook on low 5 to 6 hours or until rice is tender.
Note: this was excellent except the rice was not quite completely cooked. I would add a can of beef broth next time I tried this one.
