2 tbsp red wine vinegar
2 tsp vegetable oil
1/2 tsp salt
4 cups torn romaine lettuce
2 cups thinly sliced lean roasted pork loin
2 oranges, peeled and thinly sliced
1 red onion, thinly sliced
2 tbsp minced cilantro
1/2 jalapeno pepper, seeded, deveined
1 cup sliced cooked beets
- whisk the vinegar, oil and salt in a small bowl
- combine the lettuce, pork, oranges, onion, cilantro, and jalapeno in a bowl. Drizzle with the dressing and toss to combine.
- divide the beets among 4 salad plates; top with salad.
Makes 4 servings
